1.枣泥加入奶粉,用小号手动打蛋器搅拌均匀,这个没有特殊手法,转圈搅就可以。

3.枣泥里面会有枣皮,用60目细筛网过筛一遍。

5.蛋清加入玉米淀粉和细砂糖,用电动打蛋器打发。

6.打发至提起打蛋器呈直立的小尖角。

7.加入三分之一蛋白到枣泥糊里,翻拌均匀。

8.翻拌均匀后的面糊,一次性倒入剩下的蛋白里,继续翻拌均匀。

9.这是翻拌均匀后的状态,细腻浓稠。大家不要翻拌次数过多,大概翻拌均匀看不到蛋白即可,之后装入裱花袋,事先把裱花嘴装到裱花袋里。

10.裱花嘴垂直挤出花型之后快速向上提起。

11.烤箱上下火100度预热,烤50到60分钟,这次用的是EAT风炉,四层同烤,一次可以出四盘的量,热风循环烤,定型快,不上色。

小窍门&温馨提示
注意??第一,想要溶豆细腻气孔少,枣泥糊一定要过筛。第二,蛋白一定要打到位,直立的尖角,硬性发泡状态,否则拌面糊的时候很容易消泡。第三,翻拌面糊一定要速度快,不要过度翻拌,翻拌过久也会消泡的。
